Energy Bars – by Dr Marilyn Golden

• 2 cups medjool dates, pitted
• ½ cup chia seeds
• ½ cup flax seeds
• ½ cup sunflower seeds
• ½ cup pepitas (pumpkin seeds)
• ½ cup sesame seeds
• ½ cup desiccated coconut
• 2 cups black mission figs or dried figs
• Juice of ½ an orange
• Pinch of salt
• 1 teaspoon vanilla extract
Add the ingredients to a food processor, adding the orange juice last a little at a time so the mixture does not become too wet and process until the batter sticks together. Roll the dough onto a flat surface and cut into bars. Store in the freezer.
Variation: Add ¼ cup each of carob and cacao powder to the batter in the food processor.
